Mel’s Kitchen is back with a Durban Curry!
Mel is back with her good friend Julie and is cooking up a spicy Durban Curry! You can find the full recipe below.
Julies Chicken Curry Recipe:
- 1 Kg Chicken pieces
- 3 potatoes
- 2 tomatoes chopped or tinned tomato.
- 1 large onion chopped
- 1 tablespoon fresh ginger
- 1 tablespoon chopped garlic
- 2 Bayleaves
- 2 Cinnanon sticks
- 2 starani seeds
- a few cloves
- 2 Tablespoons Bombay masala
- 1 tablespoon kashmeri masala
- 1 teaspoon jeera powder (cumin)
- 1 teaspoon dhania powder (coriander)
- 1 teaspoon soomph powder
- 2 teaspoon paprika
- fresh coriander (dhania).
Put oil in pot, heat. Add chopped onion and fry until golden.Add the garlic and ginger ,bayleaves,cinnamon sticks,star anise,cloves, curry leaves.Stir.Add Bombay masala,Kashmiri Masala,cumin and dhania powder and soomph.
Let it fry for a few minutes and then add the chopped tomatoes and chicken pieces.Add the paparika and let it cook until chicken is nearly soft.Add potatoes and add salt to taste.Leave to simmer until chicken and potatoes are soft.Taste to adjust seasoning and add fresh coriander.
Serve with basmati rice and roti or naan bread.
